Sheet Pan Shrimp and Veggies

This is a super easy and delicious dish, perfect for a busy weeknight. It can be made with any vegetable and any protein, and with any side! Substitute the shrimp for chicken for a whole new dish!

Here’s how I did it:

Ingredients

  • Cauliflower, in florets
  • Cherry tomatoes, halved
  • Bell pepper, chopped
  • Asparagus, chopped
  • Red onion, chopped
  • Olive oil
  • Salt and Pepper
  • Paprika
  • Garlic powder
  • Shrimp

Directions

  1. Add all vegetables onto the pan. Pour 2 tsp olive oil onto veggies with salt, pepper, paprika, and garlic powder. Add to oven. Cook until roasted, charred, about 20 minutes.
  2. Add shrimp to sheet pan. Pour 1 tsp olive oil onto shrimp and top with salt, pepper, paprika, and garlic powder. Cook in oven for 6-7 minutes, or until pink.
  3. Remove from oven and serve with potatoes, rice, or by itself!
