Zucchini Noodles with Pesto, Tomatoes, and Parmesan

Super simple side for any dish! It was even approved by my husband, the pickiest eater of all time!

The flavors of the parmesan and pesto made this delicious!


  • 8 oz zucchini/squash noodles
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup prepared pesto
  • 2 Tbsp parmesan cheese
  • 2 Tbsp olive oil


  1. Heat 2 Tbsp olive oil in pan. Add zucchini noodles and tomatoes to pan; cook for 6-7 minutes, until soft.
  2. Add in pesto. Cook an additional 2-3 minutes.
  3. Remove from heat. Top with parmesan. Serve!
