Super simple side for any dish! It was even approved by my husband, the pickiest eater of all time!
The flavors of the parmesan and pesto made this delicious!
- 8 oz zucchini/squash noodles
- 1/2 cup cherry tomatoes, halved
- 1/3 cup prepared pesto
- 2 Tbsp parmesan cheese
- 2 Tbsp olive oil
- Heat 2 Tbsp olive oil in pan. Add zucchini noodles and tomatoes to pan; cook for 6-7 minutes, until soft.
- Add in pesto. Cook an additional 2-3 minutes.
- Remove from heat. Top with parmesan. Serve!
